TURKEY Guide

Christmas is always a special time of year and the highlight of the day, other than the presents, is the food,  so here is our handy guide to the different types of turkey we have available to make your Christmas dinner the best meal of the year.

Whole Turkey

The full bird. Contains both white and dark meat. Perfect for stuffing. Makes a spectacular centrepiece for your Christmas table.

Copas Turkey 8-8.9kg (18lb+)

Turkey CROWN

The breast meat on the bone with the legs removed. For those who only want the white meat but still like to cook on the bone. These can also be stuffed.

Turkey BREAST

Just the breast meat without the bones. For those looking for something smaller, quicker to cook and a bit more convenient.

Walters TURKEYs

These are our premium choice birds. Free-range bronze turkeys which are slow grown, hand-plucked and game hung for 2 weeks for a delicious rich and full flavour. Walters are very passionate about the welfare and production of their turkeys. These birds are slow grow and reach maturity naturally. Traditional farming methods are used to rear their turkeys with a diet of homegrown cereals milled on farm. These turkeys also have a superior meat to weight ratio to white birds, meaning that a smaller bird will feed more people.

Available as Whole Bird, Crown or Breast Roast, all come beautifully boxed with a handy pop up timer. Whole Birds and Crowns also come with giblets, perfect for making gravy.

These are our alternative to the Copas proucts we previously sold.

Grade A breast roast

These are prepared in house at Hugh Black & Sons factory in Bathgate. If you are looking for something convenient and easy to cook at a reasonable price, then this is the perfect product for you. Comes complete with a handy pop-up timer.

 

PACKINGTON CHICKEN

This is the same products as the Copas chicken we previously sold. These free range cockerels make a great centrepiece for your table. Each bird is given time to mature slowly and naturally on the family farm. This allows a beautiful depth of flavour to develop alongside moist, succulent, tender meat. Packington Chicken was awarded a fantastic 2-star in the Great Taste Awards 2023. Comes in a beautiful presentation box.

If you are unsure how to cook your turkey, we would recommend looking online where you are sure to find something to suit your needs and cooking ability. The BBC website has several which are easy to follow: https://www.bbcgoodfood.com/recipes/collection/turkey-recipes.

Copas turkey products also come with their own cooking instructions which we have found to be very accurate.

Here are a few tips to bear in mind when you are cooking your turkey:

  1. Your turkey will cook more evenly and faster if you start it out at room temperature so remove the turkey from the refrigerator 1 hour before roasting.
  2. If you have stuffed your turkey or crown, be sure to add the weight of the stuffing when calculating your cooking time.
  3. Make sure that your oven is at the correct temperature before cooking.
  4. We cannot overstate the importance of resting your turkey after roasting. Cover loosely with foil and allow to rest for at least 30 minutes (just make sure that you sit it on something that will catch the juices. Nobody wants to spend Christmas day mopping the floor!).

Please note that if you order a turkey product for Collection after the 25th of December it will be frozen. We will remove your turkey from the freezer the day before collection.
