We are firm believers in the Farm to Fork philosophy. We understand that provenance and sustainability are increasingly important to our customers. By working closely with our farmers and Quality Meat Scotland, we ensure that the high production and animal welfare standards at the heart of the Scotch Beef, Scotch Lamb and Specially Selected Pork brands are maintained. By buying locally, we also ensure that our products have low food miles.

Every week, we personally select cattle produced by some of Scotland’s top beef farmers from livestock markets in Lanark, Stirling and St Boswells. Years of experience as a farmer, stock judge and butcher mean that Hugh can hand pick the animals which will produce the best beef. Limousin Cross heifers are his preference as they are bred specifically for the quality and texture of the meat. Over the years we have forged strong relationships with our suppliers and we proudly display the name of the farms supplying that week’s beef in each of our shops.

Our Scotch Lamb comes from our own farm, Castlehill on the outskirts of Lanark. Here we rear Texel cross lambs which are reared on their mother’s milk, then grass fed. The majority of the time they are outside, doing exactly what they would be doing naturally.  This saw us crowned Scotch Lamb Butcher of the year 2019/2020.

Tom Wilkinson at Woodfoot Farm near Hawick supplies our free-range pigs. Tom has worked with us for years and his outdoor reared pigs produce pork which is both succulent and full of flavour.

Low food miles

All of our animals are processed at Wishaw Abattoir, where we have our own cutting plants. From here, the meat is transferred to our 14800sq ft, purpose-built factory in Bathgate, West Lothian where our team of in-house butchers and bakers prepare all items for our shops. From our award-winning steak and spring onion burger and sliced sausage to our now famous award-winning steak pies, every item is produced to the highest standard.

We believe that by controlling the process from the Farm to Fork, we can be sure of the quality and traceability of all of our products and you can be sure that the food on your plate is not only delicious, but also locally sourced and supporting Scottish Farming.
